Country Cheese Grits

Preheat oven to 325.  Grease 8x8x2 inch baking dish.  Prepare grits for 8 servings (recipe below).  Into the hot grits, stir 1 ½ cups grated sharp cheese and ½ cup butter or margarine.  Beat 2 eggs then gradually add 1 cup of the hot grits mixture; return this to mixture.  Pour into prepared dish and bake 30 minutes.  Let stand 10 minutes before serving.  Makes 8 servings.

8 servings grits:

Boil 4 cups of water with 1 teaspoon salt.  Pour 1 cup of grits into rapidly boiling water.  Cook and stir until boiling.  Cover, reduce heat to low, and continue cooking for 5 to 6 minutes, stirring occasionally.
